GRILLED SWEET POTATO WEDGES

Grilling browns the sweet potatoes without the calories and fat of frying. The lively coating of oregano, garlic powder,and cinnamon is the perfect partner for subtly sweet layers

Grill 3 minutes

1/2 medium sweet potato
scrubbed (6oz)
1/4 tsp dried oregano
1/8 tsp garlic powder
dash of cinnamon
1 tsp snipped fresh cilantro

CUT THE HALF SWEET POTATO IN HALF CROSSWISE. CUT EACH HALF LENGTHWISE, INTO 1 INCH-THICK WEDGES. IN A MEDIUM COVERED SAUCE PAN COOK WEDGES IN BOILING WATER (JUST COVER) COOK 8 TO 10 MINUTES OR UNTIL JUST TENDER. DRAIN WELL PAT DRY WITH PAPER TOWELS.
IN A SMALL BOWL COMBINE OREGANO, GARLIC POWDER, CINNAMON AND A DASH OF SALT, COAT WEDGES WITH COOKING SPRAY, SPRINKLE EVENLY WITH OREGANO MIXTURE.
PLACE POTATO WEDGES ON THE RACK OF AN UNCOVERED GRILL DIRECTLY OVER MEDIUM COALS. GRILLS 3 TO 5 MINUTES OR UNTIL WEDGES ARE SLIGHTLY BROWNED, TURNING ONCE HALFWAY THROUGH GRILLING. REDUCE HEAT TO MEDIUM PLACE WEDGES ON GRILL RACK OVER HEAT. COVER AND GRILL AS ABOVE.
WHEN READY TO SERVE SPRINKLE POTATO PIECES WITH CILANTRO.
