Cantaloupe,Tomato,Avocado, and Sweet Onion Salad

(makes 8 servings)
4 cups 1-inch cubes of cantaloupe
2 medium tomatoes, coarsely chopped
1 large ripe "Haas "avocado, pitted, peeled, and thinly sliced
1/2 medium sweet onion, minced
juice of 1 large lemon
8 green loose-leaf lettuce leaves, washed and crisped
freshly ground pepper
minced flat-leaf parsley for garnish (optional)
In a large bowl, combine the cantaloupe, tomatoes, avocado, and sweet onion. Drizzle with lemon juice. Toss gently to mix.
Line a large salad bowl with lettuce leaves. Spoon the cantaloupe mixture in the center and season to taste with pepper. Sprinkle parsley on top (if using). Serve at once.

Cauliflour the New Potato Salad!


Chef Pat bought a big head of cauliflower. He cut it up into flowerettes and made a "mock potato" salad out of it. You know, like "mock mashed potatoes"?I took a few small pieces of cauliflower and steamed them for 3-1/2 min. Just barely fork tender.Minced up some red onion, celery and green onion. Used very little salt and freshly ground pepper. Using Lite Mayonnaisse, dijon mustand and a pinch of Splenda for the dressing. He added a minced hard boiled egg to it. It was really good. Even the New Room patrons said it was good! This is a good substitute for those watching their carb intake.

Diabetic Friendly Low Carb Fried Catfish


Many of the patrons to "the bountiful table" are patients to the clinic operating within the NEWROOM. Meals served are conscious of diabetics, and heart patients.

Every one will enjoy this recipe!


Low CARB Southern Fried Catfish
Ingredients
· Catfish fillets
· 2 eggs
· ½ cup milk
· ½ cup ground or chopped pork rinds
· ½ cup any fish breading
· Vegetable oil for frying
·
Directions
Mix eggs and milk together. In a separate bowl, combine pork rinds and fish breading. Dip pieces of fish in milk/egg mixture and then coat with the breading mixture. Deep fry until golden brown.
Makes 6 servings (1½ cups)
